Easy Chicken Taco Recipe #Nutrisystem

This is a super quick and easy way to jazz up your taco and make it extra healthy as well. One thing that I’ve found with my family, they don’t question whether or not it’s healthy as long as it tastes good.  This recipe is a great way to include nutritional food in their diet.  🙂

Here’s some nutritional information that shows that making some minor changes in your recipe can have some major benefits!

First, you can save 40 calories just by switching to fat-free cottage cheese.  A 1/2-cup serving of fat-free cottage cheese has only 80 calories (compared to a 1/2-cup serving of 4% fat product that has about 120 calories).

Next, you can save almost 100 calories just by using a whole wheat tortilla.  A wheat tortilla (six-inch diameter) has only 53 calories. compared to a flour tortilla that has 150 calories.

Then, add lean chicken breast and healthy vegetables, and you’ve got yourself an quick and easy and healthy meal!

I saw this on Pinterest and just had to try it!  Such an easy way to get more of your daily veggies, and lead a healthier lifestyle. Not a recipe as much as a way of conveniently storing this pre-made meal. The trick is to put the dressing on the bottom, then put the heavier items in first, and lettuce on top so that nothing squishes it.

This is a super quick and easy hummus recipe, that will save you a BUNCH over buying it at the store.

My family really enjoys healthy snacks that they don’t know are good for them, such as this yummy dip!  It’s great for breakfast or as an appetizer.  I hadn’t even considered making my own hummus until just recently when my cousin introduced me to her recipe.

It is SO easy.  Just a few ingredients, chop in a food processor or blender, and within minutes you’ve got a healthy, inexpensive snack for you and your family. And really, how many things are there to make with chickpeas or garbanzo beans anyway!  Plus, there are lots of choices for flavors to add also.

Compare prices and save! A 16 oz tub of hummus can cost $5 – $10 at the deli (my favorite is Trader Joe’s Hummus!) But why spend that much when you can MAKE this hummus for around $2 or less for 16 oz!!

Description

This easy and fast hummus recipe will be your favorite! Hummus is a Smart Carb! This hummus recipe is a perfect “Smart Carb” in the Nutrisystem daily meal plan.


Ingredients

Scale
  • 1/3 cup tahini
  • 2–4 tablespoons cold water, or more if needed to allow tahini to blend thoroughly
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon fine sea salt
  • 2 medium cloves garlic, peeled and smashed
  • juice of 1 lemon (aka 2–3 tablespoons)
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • optional toppings: extra drizzle of olive oil, chopped fresh parsley, sprinkle of ground sumac or paprika, toasted pine nuts

Instructions

  1. To food processor, add: tahini, cold water, olive oil, cumin, salt, garlic and lemon juice. Puree until smooth (3-4 minutes).
  2. Add chickpeas. Puree until smooth (3-4 minutes). Stop after 2 minutes and scrape sides of bowl to mis thoroughly. If too thick, add another tablespoon of water.
  3. Season with additional salt, cumin, and/or lemon juice if needed.
  4. Serve immediately, garnished with your desired toppings.  Or transfer to a sealed container and refrigerate for up to 3 days.

Making hard boiled eggs is easy, and takes only a few minutes.   Be cautious of eating too many egg yolks (the yellow inner part) because they’re high in cholesterol. Whether or not cholesterol is good for you or bad for you, too much is not good. My doctor told me no more than 3 egg yolks per week. Consult with your own doctor to find out what’s best for you.

Easy/Hard boiled? Sounds like an oxymoron. LOL! But there’s nothing redundant about eggs!  Hard boiled eggs are naturally rich in iron and high in protein. They make a great after-school snack or use in salads, or eat solo for breakfast. You can hard boil a dozen eggs and color them for Easter eggs!  Hide them in your house or lawn and have a fun Easter egg hunt on the cheap.  You can also hard boil eggs, remove the yolk, mix in a few spices and mayo then replace to make deviled eggs. And of course, they make the best Scary Eye Deviled Egg Halloween Treats!

Description

This crazy easy hard boiled egg recipe takes the guesswork out of making hardboiled eggs. Perfect for preparing Easter eggs, deviled eggs or to eat in chef’s salad!


Ingredients

Eggs (1 or 12, whatever you need)


Instructions

  1. Place eggs in a pan, no more than 1-layer deep (eggs should fit on the bottom of pan, not stack up).
  2. Cover eggs with cold water. Add just enough water to barely cover them.
  3. Heater on Medium heat until water comes to a hard, rolling boil.
  4. Remove pan from heat. Cover.
  5. Leave eggs in the hot water for 10 minutes for hard boiled eggs, or 4 minutes for soft boiled eggs.
  6. Remove eggs from hot water with tongs or a slotted spoon. Tap to break shell slightly. Put in colander/strainer and run under cold water to stop the cooking process.

Notes

Perfect for adding to chef’s salad, color them for Easter, or use in deviled egg recipes!

Here is a quick, cheesy, and tasty meal for the whole family. This is my Quick Cheesy Sour Cream & Onion Chicken!

It’s so easy to prepare with some simple ingredients. I find to get creative with chicken so that the kids will like it. My 6 & 5 year old are very picky eaters.  But my kids love cheese, potato chips, and drumsticks. So why not combine it all for one awesome meal? This is a sure fire way to get kids excited about dinner tonight. 😉 I love discovering new and delicious meals that my kids enjoy. If they’re happy, I’m happy.

  • 2 cups milk (I used skim milk, but whipping cream, whole milk or 2% would work much better)
  • 1 can Sweetened Condensed Milk
  • 1/3 package chocolate flavored dry pudding mix

Instructions

  1. Add all ingredients to bowl, stand mixer or ice cream maker and mix very well on medium-high setting for 8 minutes (approx.) until thoroughly mixed.
  2. Place in container and put in freezer to set.
  3. Enjoy!

Looking for a inexpensive, yummy meal?  Well, look to the Southwest! I love Mexican food, and so does my family. My ex-mother-in-law gave it to me. She was married to a Latino man who’s mother showed her how to make all kinds of wonderful Latin delicacies.

I’ve been making this recipe for years. It’s super easy.  With a little planning your family could be enjoying this tasty dinner tonight!

If you have a Crock Pot and don’t use it, you’re missing out!  Cheaper cuts of meat can be absolutely delish if cooked long enough in a slow cooker. Don’t miss our beef roast buying guide for tips on getting the most for your money, and what to avoid!

No Beans About It!

Be sure to use the right beans! Because, they can be difficult to find in some areas. There are various brands, but the whole pinto beans flavored with jalapeños are best for this recipe.

My MIL was very clear: you MUST use Ranch Style beans. So, I wrongly thought that was a type of beans (and, technically it is), but she was referring to the brand name. Turns out, I can’t find those in Wisconsin and so I’ve substituted with La Costena without a problem.

Description

This delicious recipe is a family favorite, and nobody has to know how easy it is! Just be sure to find the right beans, or your dish will lack flavor. Because, a lot of the taste comes from the beans and jalepenos. Don’t worry, it’s really not that hot!


Ingredients

Scale
  • 1 (5 lb) roast —  See guide to roast cuts (below) for more info.
  • 1 can (15 oz) Ranch Style Pinto Beans with Jalapeños
    (recommended type pictured, below. NOTE: for less spicy, choose plain pinto beans or beans without jalapeño peppers.)
  • salt (to taste)
  • pepper (to taste)

Instructions

  1. Place 2 cups water and roast in slow cooker and cook on low for 8 hour cook time (high for 5 hour cook time) – approx. time
  2. With 1 hour cook time left, drain any water left in slow cooker and add 1 can Ranch Style pinto beans
  3. Cook until roast shreds easily with fork
  4. Optional: add 1 can corn or finely chopped peppers (green, red, chili)
  5. Serve in warm tortilla, can be topped with shredded cheese, tomatoes, lettuce, sour cream, etc.

  • Cook Time: 8-10 hours

Gimmie’s Beer Brats Recipe & Wisco Brat ‘n Curd Panini Sandwich (with Coupons)

YUM!! Here’s a great way to use up those bratwurst you grilled over the 4th of July!  First, we’ll share our yummy Beer Brat recipe and then we’ll share what to do with leftover brats. A real taste of Wisconsin: brats and cheese curds, melted into a toasted panini sandwich. Yah sure!

Gimmie’s Beer Brats

Brats ‘n beer are a favorite in the Midwest. These yummy sausages are a hearty addition to any backyard barbecue. Since we’re vacationing at my family’s lake house, I couldn’t resist cooking up some local flavor.

INGREDIENTS

  • Package of raw bratwursts
  • 4 cans of cheap beer (any type, cheap beer works just fine and doesn’t waste the good stuff 😉 )

DIRECTIONS

  • Pour 4 cans of beer into a large pan
  • Place raw brats in beer so they’re completely covered
  • Boil beer ‘n brats over high heat until brats turn a grey color. (They’re red when they’re raw)
  • Drain beer into sink and barbecue brats until cooked thoroughly
  • Serve in a brat bun (wheat or white – similar to a hot dog but, but usually larger) with your favorite condiments: ketchup, mustard, relish, sour kraut, etc.
  • Enjoy!

What to do with leftover brats? Make this!

Gimmie’s Wisco Brat & Curd Panini Sandwich

INGREDIENTS

  • Cooked bratwurst sausage (see recipe above)
  • Hand full of Wisconsin Cheese Curds
  • Your choice of condiments (mayo, ketchup, mustard, relish, kraut)
  • Two slices of bread
  • Panini maker, toaster or frying pan

DIRECTIONS

  • Slice cooked brat into thin slices or strips, stack onto bottom piece of sandwich bread
  • Chop Cheese Curds into small chunks and sprinkle on brats
  • Smear mayo on top piece of bread, place on top of sandwich
  • Press in Panini maker for 2 minutes until toasty
    (optionally, toast bread first and assemble sandwich – or toast in frying pan coated with Pam non-stick cooking spray
