Patti LaBelle Sweet Potato Pie Recipe

Patti LaBelle Sweet Potato Pie Recipe

If you’ve noticed the trending topics on social media, you already know that Walmart Bakery has sold out of singer Patti LaBelle‘s infamous Sweet Potato Pie. If you don’t want to pay $60 for a pie on eBay, you can make your own!

It’s not hard, and so yummy! Who doesn’t love a good sweet potato pie?!

Plus, we include the SECRET to it’s amazing taste, which made fellow review blogger, James Wright, sing!

PHOTO: Patti LaBelle making sweet potato pie in 1999. Courtesy of Broadway Books, an imprint of Penguin Random House, LLC.

Ms. LaBelle got the recipe from her best friend and hairstylist Norma Gordon Harris. This pie has a thin layer of brown sugar on the bottom crust. This causes it to blacken and add flavor, as well as keeps the crust from getting soggy. This hearty pie tastes great, like sweet potatoes. It doesn’t have hints of other flavors like pineapple or raisins that sometimes get tossed into pies.

Description

Make-at-home recipe for hot Patti LaBelle Sweet Potato Pie, sold out at Walmart! Don’t pay $60 on eBay, make it yourself. it’s easy and so yummy it made a review blogger sing!

Ingredients

Scale

PIE CRUST

  • 1½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup butter-flavored vegetable shortening*, chilled
  • 1/3 cup ice water

FILLING

  • 3 large orange-fleshed sweet potatoes (Louisiana yams), scrubbed
  • 8 tablespoons (1 stick) butter, melted
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, beaten
  • 1/4 cup half-and-half
  • 3/4 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • Whipped cream, for serving (optional)

Instructions

CRUST::

  1. Sift the flour and salt into a medium bowl. Add the shortening*. Using a fork or a pastry blender, cut the shortening into the flour until the mixture resembles coarse crumbs with a few pea-sized bits. Stirring with the fork, gradually add enough of the water until the mixture clumps together (you may need more or less water). Gather up the dough and press into a thick disk. If desired, wrap the dough in wax paper and refrigerate for up to 1 hour.
  2. On a lightly floured work surface, roll out the dough into a 13-inch circle about 1/8-inch thick. Fold the dough in half. Transfer to a 9-inch pie pan, and gently unfold the dough to fit into the pan. Using scissors or a sharp knife, trim the dough to a 1-inch overhang. Fold the dough under itself so the edge of the fold is flush with the edge of the pan. Flute the dough around the edge of the pan. Cover with plastic wrap and refrigerate while making the filling.

FILLING:

  1. Bring a large pot of lightly salted water to a boil over high heat. Add the sweet potatoes and reduce the heat to medium. Cook until the sweet potatoes are tender when pierced with a knife, about 30 minutes. Drain and run under cold water until cool enough to handle. Peel the sweet potatoes and place in a medium bowl.
  2. Mash with an electric mixer on medium speed until very smooth. Measure 3 cups mashed sweet potatoes, keeping any extra for another use, and set aside.
  3. Preheat the oven to 400°F. Uncover the pie shell and brush the interior with some of the melted butter. Sprinkle 1/4 cup of the brown sugar over the bottom of the pie shell. Bake until the pie dough is set and just beginning to brown, about 15 minutes. If the pie shell puffs, do not prick it.
  4. Meanwhile, in a medium bowl, using an electric mixer on low speed, mix the mashed sweet potatoes, the remaining melted butter and 1/2 cup brown sugar, the granulated sugar, eggs, half-and-half, cinnamon, and nutmeg. Spread into the partially baked pie shell, smoothing the top.
  5. Reduce the oven temperature to 350°F. Bake until a knife inserted in the center of the filling comes out clean, about 1 ½ hours. Cool completely on a wire cake rack. Cover and refrigerate until ready to serve with whipped cream.

* Always use shortening! If you want a tender, flaky pie crust, you have to use shortening. Some cooks make their dough with butter because they like the flavor, but it bakes into a crumbly crust—and with most pie lovers, flaky is the name of the game. My solution is to use butter-flavored Crisco. Like biscuits, pie crust shouldn’t be overworked. Handle with care. The chilled shortening and ice water will also help pie crust stay nice and flaky. – Patti LaBelle

No Bake Ice Cream Cake Recipe {Dairy Queen DIY}

July 4, 2015 by Wendy

No Bake Ice Cream Cake Recipe {Takes 10 Minutes & Costs $4}

If your family loves ice cream like mine does, or if you’re a big fan of Dairy Queen or Baskin Robins birthday cakes, this ridiculously easy, fast and cheap DIY ice cream cake will be your new favorite!!

Price breakdown: Why spent $25-$35 for an ice cream cake?  Even at Walmart an ice cream cake costs $10 – $30 or more!

  • 12-pack of ice cream sandwiches: $3.88
  • non-dairy whipped topping: $0.10
  • chocolate syrup: $0.10
  • cake board: I made my own, or you can use a plate!
  • total = $4.08

Not bad for a cake that serves 12!  Much better than paying $30 at Carvel, and you can customize your cake in a zillion different ways!

Get creative!! Crumble up Oreo cookies to make the crust, center or topping. Or, you can use your favorite cookie (Girl Scout cookies are great for this!} or candy bar.  I used chocolate and caramel ice cream toppings, but you could use hot fudge, shavings from a chocolate bar – or even melt some white chocolate. Go with what your family loves, and this will be a huge hit!

Did I mention how easy this was to make?  Just unwrap the ice cream sandwiches (that part took the longest!) and arrange them on a plate or cake board. Add a center layer (if desired) – I used caramel and chocolate topping.  Then add a top layer and “frost” with non-dairy whipped topping (such as Cool Whip).  Add whatever treats to the top (I drizzled caramel on it) and serve!

Store in the freezer until ready to serve. I usually prepare it right before serving, but it will keep nicely in the freezer.

Tip: use a sharp knife (be careful!) and rinse in HOT water between cuts to slice through the ice cream easier.

Scale
  • 1–1/2 c. sugar
  • 1 c. sour cream
  • 1/2 c. butter, softened
  • 2 eggs 1-3/4
  • (3 or 4) ripe bananas, mashed

  • Brown Butter Frosting: 1/2 c. butter 4 c. powdered sugar 1-1/2 tsp. vanilla extract 3 tbsp. milk

Instructions

  1. Heat oven to 375F. Grease and flour 15×10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.
  2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
  3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.

Soft Carrot Cake Cookie Recipe with Cream Cheese Frosting

April 22, 2015 by Wendy

Soft Carrot Cake Cookie Recipe with Cream Cheese Frosting

I’ve got a ton of great recipes that are not necessarily healthy. I mean, dessert isn’t typically low calorie, high nutrient or anything good like that. So, I started thinking about one of my favorite recipes of all times: my Awesome Carrot Cake recipe. And, I thought it would be fun to try to change it up to something more healthy. Or, at least a little less unhealthy.

To make Carrot Cake Cookies, I started with my famous cake recipe but changed it up a bit. From that somewhat-unhealthy dessert, I created this much healthier, lower-calorie cookie recipe which is pretty darned awesome.

But, don’t take my word for it! I asked my son to sample them as I anxiously awaited his critique. Instead of saying it was “okay” or  “kind of bland” or, his infamous funny answer, “tastes like chicken” (no matter what he’s eating), to my surprise he said one word. “DELICIOUS!!”  I was so shocked I asked, “ARE YOU SURE???!”  Ha!

I’ve seen several recipes for Carrot Cake Cookies that call for oatmeal. Of course, this recipe is NOT an oatmeal carrotcake cookie. Don’t get me wrong. I’m sure they’re good – I love a good oatmeal cookie. But, this cookie tastes more like real carrot cake in a soft cookie form.

Substitutions

To make this a healthy recipe compared to my Awesome Carrot Cake, I replaced a few things.

For example, instead of white flour, I used whole wheat flour. You can substitute all or part of what the recipe calls for.

Next, instead of white sugar, I substituted unsweetened applesauce and agave nectar.

Finally, I used slightly less eggs and less oil than the traditional recipe.

Normally, I love crushed pineapple in carrot cake, but didn’t have any so I skipped it. It might be good in the cookies though, so I’ll have to try that some day.

Fewer Calories in this Carrot Cake Cookie Recipe

The calories in this Carrot Cake Cookies Recipe are almost half that of the regular carrot cake recipe. In other words, cake has 156 calories vs. cookies have 85 calories. Yay!

Cream Cheese Frosting

The frosting is so good that I practically drool just thinking about it. You can add it to the top of your cookies after they’ve cooled (or just before serving). Or, try adding them to the bottom and put two cookies together to make a cookie sandwich.

And, if you’re making them as sandwiches, you can make them half the size so they’re bite-size and not too big! Of course, you can even mix in some fun colors to make them match a party theme. How fun is that?!

  • Two large eggs (healthy option: replace one egg with 1/4 C unsweetened applesauce)

  • 1 C finely chopped pecans (optional)

  2. Combine butter, sugar and brown sugar in bowl. Beat at medium speed until creamy. You’ll need to scrape the sides of the bowl to mix all ingredients.
  3. Add eggs and vanilla; beat again until well mixed.
  4. In another bowl, sift together flour, baking soda, cinnamon and salt. Add creamed ingredients from Steps 2 and 3. Beat at low speed, scraping bowl often, until well mixed.
  5. Stir in carrots and pecans.
  6. Grease cookie sheets. Form a rounded tablespoon of dough for each cookie, spaced evenly 2″ – 3″ apart on the sheet.
  7. Bake 11-13 minutes or until lightly browned around edges. Cool completely and frost.

Notes

Frosting Recipe:

INGREDIENTS

  • 4 C powdered sugar
  • ½ C butter, softened
  • 1 (8-ounce) package cream cheese, softened
  • ½ t vanilla
  • Green and Orange food coloring (optional)

DIRECTIONS

  1. Combine powdered sugar, butter, cream cheese and vanilla in bowl; beat at medium speed until smooth and creamy. If using food coloring, then reserve 1/2 C frosting and see step 3.
  2. Frost each cooled cookie with approx. 2 t. frosting.
  3. If using food coloring: divide the reserved frosting in half. Tint one half green and one half orange. Next, spoon each tinted frosting into its own resealable plastic food bags. Cat in the Hat Whimsical Birthday Cake Recipe

Cat in the Hat Birthday Cake recipe

Cat in the Hat Whimsical Birthday Cake Recipe

For Dr. Seuss’s birthday, my daughter is celebrating by giving a Cat in the Hat book report in the form of a Dr. Seuss birthday party! For the occasion, we made a whimsical Cat in the Hat Birthday Cake, using a yellow cake recipe. It is reminiscent of the cake in the book The Cat in the Hat, by Dr Seuss. She’s so excited to bring it to school and share with her class.

To get the funny off-kilter top layer, I used a baking rack from my turkey pan to hold the cake pan at an angle in the oven.

Why Bake a Cake from Scratch?

With cake mixes so readily available and cheap, making a cake from scratch has become a lost art. I usually stock up on cake mixes when they’re on sale or I have a coupon. My cake mix stock-up price is 75¢ or less. And, you still have to add eggs and oil or butter so that adds to the cost of a cake mix! Besides, baking a cake from scratch is fun! Buy the ingredients in bulk to save even more!

Cat in the Hat Birthday Cake recipe Step by Step

Cat in the Hat Birthday Cake recipe is easy and fun. Frosting the cake was equally creative and fun. And, you can’t go wrong because it’s supposed to look sloppy and fun!

Easy White Frosting Recipe

Easy White Frosting Recipe

Super easy and fast White Frosting Recipe Great to frost cupcakes or cake. Make any color with a few drops of food coloring!

TIP: Don’t have powdered sugar? Put granulated white sugar in blender on high for a few minutes until it’s powdered!  White sugar is cheaper than powdered confectioners sugar too, so this can be done just to save money!

Store-bought frosting can be pricey. I almost always make my own frosting because it’s so easy and cheap! Here’s a favorite recipe for easy white frosting. You can use this on your favorite cake, and even throw in some food coloring to get whatever color you want! Shown above, we made a whimsical Dr. Seuss, Cat in the Hat cake and put a little red food coloring to make half of the frosting an antique pink!

Fun Lollipop Cookies Recipe (Sugar Cookies)

Fun Lollipop Cookies Recipe (Sugar Cookies)

Fun Lollipop Cookies Recipe (Sugar Cookies)

This past weekend my little girl was away staying the night with my sister. I decided I was going to surprise her with
some cute treats when she got home the next day. I went online searching for something colorful, and easy to make and I came across this adorable recipe for Lollipop Cookies. We have made decorated cookies on a stick before, but never have I tried to make them look like big lollipops.

After looking through the cabinets, and fridge I found I had everything I needed, so I decided to give them a try.

The entire process of making the cookies, then wrapping and tying them off took some time. That’s optional, so you can skip that if you’re just going to eat them!

Colorful & Fun

They are perfect for parties, and special holidays. You might even display them sticking out of a colorful vase like a big bouquet.

Of course, the colors will make them perfect for any occasion! For example, choose red and white for Valentine’s day. Or, red and green for Christmas! Orange and green would be perfect for Halloween. You get the idea!

Check out the recipe below, and give it a try!

Description

This twist (literally!) on the traditional sugar cookie is fun to make and tastes great! While the recipe itself is a simple sugar cookie, the assembly is what’s special about this one.

Ingredients

Scale
  • 2 ¾ C all-purpose flour
  • 1 t. baking soda
  • ½ t. baking powder
  • 1 C butter, softened
  • 1 ½ C white sugar
  • 1 egg
  • 1 t. vanilla extract
  • Lollipop sticks (I used skewers, cut in half)

Instructions

  1. Preheat oven to 375° F (190° C).
  2. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients.
  4. Separate dough into two halves (if you’re doing two colors). Mix one half with orange and one half with green (or whichever colors you’re using).
  5. Scoop a rounded teaspoonful of each color dough and form a “snake” (thick pencil shape). Set the two “snakes” next to each other, and form into a lollipop (shown). Place onto un-greased cookie sheets.
  6. Bake 8 to 10 minutes.
  7. Remove from oven, and let stand on cookie sheet for two minutes before removing with pancake turner (spatula) to cool on wire racks. Insert a lollipop stick in each before it cools.

Cookie Recipes: Vanilla Crispies – Christmas & Valentines Cookie

December 20, 2014 by Wendy

Vanilla Crispies Cookies Recipe

Whether it’s for Christmas, Valentines or Easter – these cookie recipes can’t be beat! Use vanilla cookies with different colored sprinkles or sugar to fit the occasion!

These Vanilla Crispies Cookies are simple, easy and delicious.  They melt in your mouth!  Also, they are tender and crispy and quite addicting!

Of course, we think they’re the perfect Christmas cookies! Santa will love these and your family will too. I can’t say for certain that Santa chooses houses with the best cookies first, but why risk it?

Tips & Ideas

These cookies are easy to make and include ingredients that you probably already have in stock, with the possible exception of colored sugar. The original recipe calls for plain white sugar, but adding red, green, gold, etc. makes them more festive for the holidays.

Forming the cookie

I like to use the base of a wine glass to press down and shape the cookies.  They are best when they are very thin, and the round base also serves as a way of making sure they are all the same size. You will need to get the base sticky by dipping the first time into the cookie dough in bowl, then set it into the sugar mixture (sugar mixture should stick to base of glass), and then press onto the cookie dough ball.  Lift slowly so as to not mess up the cookie.  If your cookie doesn’t have enough sugar on top, you can do it again as needed.

Don’t overdo it!

Watch the time very closely.  I always start with first pan on bottom rack of oven, timed for 4-5 minutes, then transfer to top shelf when second pan is ready/timer goes off.  I time/watch them very closely because they are best when they are not over baked.

Let cookies cool for a few minutes before removing from cookie sheet with a sharp (not blunt) spatula to remove the cookies.

I used two different kinds of cookie sheets, one was dark colored, non-stick surface and the other was silver/aluminum double-wall insulated. The aluminum pan really gave the best results but took a couple of minutes longer.  It’s worth the wait, I’d say. 🙂
