Ingredients

Scale
  • 1/2 cupĀ Chocolate syrup
  • 1/2 tspĀ Vanilla extract, pure
  • 1 (7-ounce) canĀ Condensed milk, sweetened
  • 1/2 cupĀ Heavy cream
  • 2 cupsĀ Whole milk

Instructions

Homemade Chocolate Ice Cream Pudding ~ Only 3 Ingredients!Ā 

I love homemade ice cream, but I hate how much work it is to make it!!Ā  I can honestly say this is the easiest ice cream ever. If you want vanilla, it’s just two ingredients! Chocolate adds one more. Quick, easy, and sooooo yummy!

The idea struck me to use dry instant pudding mix when ransacking my cupboard and not finding anything else that looked good. We had chocolate ice cream in the freezer, but that’s no fun. I wanted to make dessert with my little girl. Editor’s note: even though it literally took two minutes to mix up a batch, she still bailed on me. Ha, joke’s on her! I didn’t share. šŸ˜›

I used my KitchenAid Ice Cream Maker Attachment because I have one, and I love it. No rock salt or anything needed with it. It’s pretty easy to use.Ā  I also like to do things with reckless abandon, so I didn’t look up how to actually use it. I did read the manual the first time, but that was at least a year ago and I can’t remember what I did this morning. So, yeah, you should check your own ice cream maker’s manual for best results.

As for the value, the pudding package has a tag on it that says 49Ā¢ and the sweetened condensed milk was 69Ā¢ (off brand, probably from a “crash and dent” grocery store).Ā  If you add in the milk, I still spent well under $1.50 for the whole pint of ice cream.Ā  This stuff is better than Talenti which costs about $6 per pint!

Homemade Chocolate Ice Cream Pudding ~ Only 3 Ingredients!

Description

Homemade ice cream is a favorite at my house! Whether you want the full ice-cream maker experience or you just want a quick treat (or don’t have a machine), you can score with this sweet treat your whole family will love.


Ingredients

Scale
  • 1Ā –Ā 14-ounce can sweetened condensed milk
  • 2 cups heavy cream (1 pint)
  • 1 package chocolate pudding

Instructions

  1. Pre-freeze your ice cream maker’s bowl (overnight, or 24 hours if you have time). Check your’s instructions for best results. Assemble your ice cream maker.
  2. Add ingredients to a bowl and mix well, or if possible mix in a blender until smooth.
  3. Pour the ice cream mixture into the ice-cream maker’s frozen bowl and turn it on. Follow directions for your machine for how long to churn.
  4. I recommend serving immediately for the best soft-serve consistency. But, you can also freeze in a freezer-safe container for a few hours. Then, let it thaw a few minutes before scooping it out to serve.

No Churn Method:

  1. Follow steps above, but instead of churning in an ice cream machine, put in a freezer-safe container instead. Freeze for 5+ hours. Remove from freezer and allow to stand for 2-3 minutes. Then, scoop up and serve.

Patti LaBelle Sweet Potato Pie Recipe

If you’ve noticed the trending topics on social media, you already know that Walmart Bakery has sold out of singer Patti LaBelle‘s infamous Sweet Potato Pie. If you don’t want to pay $60 for a pie on eBay, you can make your own!

It’s not hard, and so yummy! Who doesn’t love a good sweet potato pie?!

Plus, we include the SECRET to it’s amazing taste, which made fellow review blogger, James Wright, sing!

Ms. LaBelle got the recipe from her best friend and hairstylist Norma Gordon Harris. This pie has a thin layer of brown sugar on the bottom crust. This causes it to blacken and add flavor, as well as keeps the crust from getting soggy. This hearty pie tastes great, like sweet potatoes. It doesn’t have hints of other flavors like pineapple or raisins that sometimes get tossed into pies.

PIE CRUST

  • 1½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup butter-flavored vegetable shortening*, chilled
  • 1/3 cup ice water

FILLING

  • 3 large orange-fleshed sweet potatoes (Louisiana yams), scrubbed
  • 8 tablespoons (1 stick) butter, melted
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, beaten
  • 1/4 cup half-and-half
  • 3/4 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • Whipped cream, for serving (optional)

Instructions

CRUST::

  1. Sift the flour and salt into a medium bowl. Add the shortening*. Using a fork or a pastry blender, cut the shortening into the flour until the mixture resembles coarse crumbs with a few pea-sized bits. Stirring with the fork, gradually add enough of the water until the mixture clumps together (you may need more or less water). Gather up the dough and press into a thick disk. If desired, wrap the dough in wax paper and refrigerate for up to 1 hour.
  2. On a lightly floured work surface, roll out the dough into a 13-inch circle about 1/8-inch thick. Fold the dough in half. Transfer to a 9-inch pie pan, and gently unfold the dough to fit into the pan. Using scissors or a sharp knife, trim the dough to a 1-inch overhang. Fold the dough under itself so the edge of the fold is flush with the edge of the pan. Flute the dough around the edge of the pan. Cover with plastic wrap and refrigerate while making the filling.

FILLING:

  1. Bring a large pot of lightly salted water to a boil over high heat. Add the sweet potatoes and reduce the heat to medium. Cook until the sweet potatoes are tender when pierced with a knife, about 30 minutes. Drain and run under cold water until cool enough to handle. Peel the sweet potatoes and place in a medium bowl.
  2. Mash with an electric mixer on medium speed until very smooth. Measure 3 cups mashed sweet potatoes, keeping any extra for another use, and set aside.
  3. Preheat the oven to 400°F. Uncover the pie shell and brush the interior with some of the melted butter. Sprinkle 1/4 cup of the brown sugar over the bottom of the pie shell. Bake until the pie dough is set and just beginning to brown, about 15 minutes. If the pie shell puffs, do not prick it.
  4. Meanwhile, in a medium bowl, using an electric mixer on low speed, mix the mashed sweet potatoes, the remaining melted butter and 1/2 cup brown sugar, the granulated sugar, eggs, half-and-half, cinnamon, and nutmeg. Spread into the partially baked pie shell, smoothing the top.
  5. Reduce the oven temperature to 350°F. Bake until a knife inserted in the center of the filling comes out clean, about 1 ½ hours. Cool completely on a wire cake rack. Cover and refrigerate until ready to serve with whipped cream.

* Always use shortening! If you want a tender, flaky pie crust, you have to use shortening. Some cooks make their dough with butter because they like the flavor, but it bakes into a crumbly crust—and with most pie lovers, flaky is the name of the game. My solution is to use butter-flavored Crisco. Like biscuits, pie crust shouldn’t be overworked. Handle with care. The chilled shortening and ice water will also help pie crust stay nice and flaky. – Patti LaBelle

No Bake Ice Cream Cake Recipe {Dairy Queen DIY}

No Bake Ice Cream Cake Recipe {Takes 10 Minutes & Costs $4}

If your family loves ice cream like mine does, or if you’re a big fan of Dairy Queen or Baskin Robins birthday cakes, this ridiculously easy, fast and cheap DIY ice cream cake will be your new favorite!!

Price breakdown: Why spent $25-$35 for an ice cream cake?Ā  Even at Walmart an ice cream cake costs $10 – $30 or more!

  • 12-pack of ice cream sandwiches: $3.88
  • non-dairy whipped topping: $0.10
  • chocolate syrup: $0.10
  • cake board: I made my own, or you can use a plate!
  • total = $4.08

Not bad for a cake that serves 12!Ā  Much better than paying $30 at Carvel, and you can customize your cake in a zillion different ways!

Get creative!! Crumble up Oreo cookies to make the crust, center or topping. Or, you can use your favorite cookie (Girl Scout cookies are great for this!} or candy bar.Ā  I used chocolate and caramel ice cream toppings, but you could use hot fudge, shavings from a chocolate bar – or even melt some white chocolate. Go with what your family loves, and this will be a huge hit!

Did I mention how easy this was to make?Ā  Just unwrap the ice cream sandwiches (that part took the longest!) and arrange them on a plate or cake board. Add a center layer (if desired) – I used caramel and chocolate topping.Ā  Then add a top layer and “frost” with non-dairy whipped topping (such as Cool Whip).Ā  Add whatever treats to the top (I drizzled caramel on it) and serve!

Store in the freezer until ready to serve. I usually prepare it right before serving, but it will keep nicely in the freezer.

Tip: use a sharp knife (be careful!) and rinse in HOT water between cuts to slice through the ice cream easier.

Ingredients

Scale
  • 1–1/2 c. sugar
  • 1 c. sour cream
  • 1/2 c. butter, softened
  • 2 eggs 1-3/4
  • (3 or 4) ripe bananas, mashed
  • 2 tsp. vanilla extract
  • 2 c. all purpose flour
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1/2 c. chopped walnuts (optional)
  • Brown Butter Frosting: 1/2 c. butter 4 c. powdered sugar 1-1/2 tsp. vanilla extract 3 tbsp. milk

Instructions

  1. Heat oven to 375F. Grease and flour 15×10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.
  2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
  3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.
  4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).

Chocolate Covered Strawberry Trifle Dessert Recipe

Chocolate Covered Strawberry Jell-o Dessert Recipe

The other day I woke up with an idea to make dessert reminiscent of chocolate-covered strawberries, but something that could be displayed in my cool dish and could feed the masses with it’s sweet goodness.

I didn’t want to use that strawberry goo (glaze?) they use to make quick strawberry pie like. And, I didn’t want to have to cook it like you do to make strawberry pie filling. I wanted my berries firm and fresh! Yum!

I bought sugar-free everything to make this sinfully decadent treat something I could actually eat and enjoy without feeling guilty!

Here’s how to make this astonishingly good chocolate-covered strawberry dessert.

Seriously, this stuff is AMAZING!

And, I’m not just saying that because I invented it. (I Googled it, I think I really did come up with this! If nothing else, I haven’t seen it anywhere else… It’s an original idea, even if someone else did do it before me.) šŸ˜‰

First, since I wanted to use my cool dessert bowl, I made a lot. You can make a little or a lot. For example, you could make 1/4 this much using just one box. But, I made up 4 boxes of sugar-free gelatin (like Jell-o). The package said to boil 1 cup water per package, mix well with the powder, and then add 1 cup of cold water. It takes up to 4 hours to set. If you’re in a hurry, you can use ice cubes and it will set faster – as quickly as 20 minutes.

While my Jello-o was gellin’, I hulled 2 lbs of fresh strawberries (hulled is fancy talk for removing the green things – the stems – from the strawberries). I used my nifty huller thingy my sister gave me, or you could use the drinking straw trick (but I’ve only gotten that to work with a rigid or glass straw, and then the whole middle of the strawberry stuck in the straw, which is weird). But, I digress. Hull the strawberries, then cut them in half.

When the Jell-o started to get firm and was no longer watery, I folded in the cut strawberries. I used a lot, you wouldn’t have to. But, I wanted this to be more of a strawberry pie filling effect and less of a Jello with a few pieces of fruit.

Now, put the dessert back into the fridge and let it completely gel. You want the Jello to bounce back when you touch it. No watery, no goopy, just good ol’ firm Jello.

While I waited for the Jello to firm, I made a batch of sugar-free chocolate pudding.Ā  I used instant, so it was ready in about 20 minutes. When the Jello was firm, I piled the pudding on top and smoothed it around. Lastly, I topped with non-dairy whipped cream (like Cool Whip) and put back into the refrigerator to chill.

The result? It’s beautiful in my new dessert bowl. I’m so happy with how it turned out! And, it tastes amazing! Everyone had seconds (and thirds) and raved about how yummy, light and fresh it tasted. It would be a great dish to bring to a potluck summer barbecue or a 4th of July picnic!

  • 4 boxes sugar-free strawberry flavored gelatin (aka Jell-O)
  • 2 lbs fresh strawberries, hulled and cut in half
  • 1 box sugar-free chocolate pudding
  • 1 cup non-dairy whipped topping (aka Cool Whip)
  • water

Instructions

  1. Prepare gelatin (1 cup boiling water per box + 1 cup cold water – or ice to set faster), set in fridge
  2. Rinse, hull and cut strawberries
  3. When gelatin starts to firm, fold in fruit with spoon; put back in refrigerator
  4. Prepare pudding as directed, put in fridge to chill
  5. When gelatin has solidified completely and pudding is firm, pour on pudding and smooth
  6. Add whipped cream to top

For Dr. Seuss’s birthday, my daughter is celebrating by giving a Cat in the Hat book report in the form of a Dr. Seuss birthday party! For the occasion, we made a whimsical Cat in the Hat Birthday Cake, using a yellow cake recipe. It is reminiscent of the cake in the book The Cat in the Hat, by Dr Seuss. She’s so excited to bring it to school and share with her class.

To get the funny off-kilter top layer, I used a baking rack from my turkey pan to hold the cake pan at an angle in the oven.

Description

Baking a cake from scratch is easier than you think, and can save you money over expensive cake mixes! Little-known fact: BUTTER gives yellow cake its color!


Ingredients

Scale
  • 3 cups sifted cake flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 3/4 cups sugar
  • 2/3 cup butter or margarine
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 1 1/4 cups milk

Instructions

  1. Preheat oven to 350°F. Spray non-stick coating on pan(s).
  2. Sift together dry ingredients.
  3. Mix sugar & butter until creamy (I use a stand mixer).
  4. Add eggs and vanilla to mixer, beat thoroughly.
  5. Add dry ingredients a little at a time, adding milk in between times. Mix well for about a minute.
  6. Pour batter evenly in greased pans.
  7. Bake 29 – 33 minutes (or until toothpick inserted in center comes out clean).
  8. Cool layers in pans on wire racks for 10 minutes. Remove from pans; cool completely.
  9. Add filling and frosting!

Get creative – try different cereals like we did here! For example, I used Trix cereal for a colorful, tasty treat. You could use almost anything. Of course, Cap’n Crunch has those fun little marshmallows in it, and Cinnamon Toast Crunch would add that extra scrumptious cinnamon and sugar to this recipe.

  • 1/2 cup Mini Marshmallows (or 2–3 large, torn into quarters)
  • 3/4 teaspoon butter or margarine

Instructions

  1. Put marshmallows in large microwave-safe cup or bowl, then add cereal and butter on top.
  2. Microwave for 20 seconds (watch closely, times may vary).
  3. Stir well.
  4. Place on plate or wax paper and form into balls or shapes.
  5. Let cool for 1-2 minutes and serve!

  • Chocolate (you can melt a Hershey’s bar or use chocolate frosting)
  • Peanut butter

Instructions

  1. Put one part chocolate and one part peanut butter together in a microwave safe bowl and melt for 15 seconds (watch the time closely because microwaves vary). If not melted to your liking, try another 10 seconds. Test again. If there’s any left (ha, ha, ha), you can try for another 5 seconds or just eat it!
