Copycat Jiffy Corn Muffin
Okay, why make your own Jiffy Corn Muffin Mix when it’s only like 60 cents a box? Well, it’s not because it’s cheaper to make your own mix. Actually the cost works out to be about the same price.
Here are six reasons to make your own Corn Muffin mix:
- easy
- no hydrogenated fats
- no chemicals to keep it shelf stable
- less sugar
- more whole grains from the corn meal
- chances are you have these ingredients on hand anyway
The ingredients for your own corn muffin mix are pronounceable: flour, corn meal, oil, sugar, salt, baking powder, milk, and egg!
Here is the “ingredient” list form Jiffy:
WHEAT FLOUR, DEGERMINATED YELLOW CORN MEAL, SUGAR, ANIMAL SHORTENING (CONTAINS ONE OR MORE OF THE FOLLOWING: LARD, HYDROGENATED LARD, PARTIALLY HYDROGENATED LARD), CONTAINS LESS THAN 2% OF EACH OF THE FOLLOWING: BAKING SODA, SODIUM ACID PYROPHOSPHATE, MONOCALCIUM PHOSPHATE, SALT, WHEAT STARCH, NIACIN, REDUCED IRON, BHT PRESERVATIVE, TOCOPHEROL PRESERVATIVE, CITRIC ACID PRESERVATIVE, BHA PRESERVATIVE, TRICALCIUM PHOSPHATE, THIAMINE MONONITRATE, RIBOFLAVIN, FOLIC ACID, SILICON DIOXIDE.
Now, I am not trying to put down Jiffy Corn Muffins. I grew up on that stuff! My kids love it. My kids love the new version as well. In fact, they have no clue that it is not Jiffy! I just wanted to find an easy, not expensive way to eat more whole foods. Give it a try, I think you will like it!
