Greek Spaghetti Squash Recipe

Greek Spaghetti Squash Recipe

My sister-in-law introduced me to spaghetti squash last summer.  I had never even heard of it before (apparently I don’t get out much, lol).  It’s a squash, but when it’s cooked, it magically becomes like spaghetti.  How cool is that?  It’s great as a substitute for pasta, which is great for anyone with gluten/wheat problems.  You can use it pretty much anywhere you’d use pasta, and you can use it warm or cold.

This Greek Spaghetti Squash Recipe is just full of good stuff!  There are lots of veggies (spaghetti squash, tomatoes, onion, black olives), and fresh herbs (garlic, basil). It’s a great side dish without adding a lot of starch or carbs!
