Easy Waffle Breakfast Sandwich w/ Egg, Ham & Cheese

This is so easy! There’s no waffle batter to mess with.

And fast!! They take less than 4 minutes to make!

And, did I mention how tasty they are?! Yum!

I had the idea to whip up quick, toasty breakfast sandwiches. I remembered the 1-minute cinnamon waffle trick, which I love. So, I started thinking about what I could do easy and fast. The thing that takes longest when making waffles is putting together the batter. I needed something faster. I didn’t want something thick like English Muffins, because I wasn’t convinced it would cook the egg between the thick muffin slices.  Then it came to me.  I knew it would work, and was eager to try it. My family was a little reluctant to try it, but they LOVED them and asked for seconds!

You can add in almost anything you want: thinly sliced ham, sausage, bacon, etc. and cheese slices or small pieces of crumbled cheese, butter, etc. Use whatever you have on hand!

Description

Try these FAST and easy Waffle Breakfast Sandwiches! No batter to mix, add whatever cheese and meat you like. So tasty, your family will love them!


Ingredients

Scale
  • Egg
  • 2 slices bread
  • salt & pepper to taste
  • optional: butter, cheese, meat

Instructions

  1. Make a “well” or indent in the bread so that the egg has somewhere to sit and not run out over the sides. I used a large mason jar an indented two pieces of whole grain white bread. Careful not to push so hard you smush them together and they won’t come apart. You could do them separately if the bread is sticky. Mine worked fine doing them together.
  2. Next, spread about a teaspoon of butter on the bottom bread.
  3. Crack an egg open and carefully place in the well (indent) in one piece of bread. I used Large eggs, but you could use whatever you have I’m sure. Just be careful not to spill the egg out of the little pool you made in the bread.
  4. Here’s where you can get creative! I added cheese to some of my waffle breakfast sandwiches. You could use cheese slices, crumbles or even shredded cheese. Thinly sliced ham, or sausage or bacon would be good in here too. I’m not sure the waffle iron would cook the meat in this short time; you might want to cook it before adding to your waffle sandwich.
  5. Add salt and pepper, and set the bread with all the stuff on it on the waffle iron.
  6. Place the top slice of bread on it (flip it over so the indent is spaced to give room to the egg mixture)
  7. Close the waffle iron gently, and let it cook for about 15 seconds. If your waffle iron is one that you flip over like mine, you can flip it over.
  8. Cook for another minute for a lightly cooked egg sandwich, two minutes for medium, and three minutes for well cooked with slightly crunchy, toasted bread. Waffle irons may vary, so play it by ear.
  9. Cut into sections and serve

1 Minute Cinnabon Waffles

This is the fastest, easiest, most DEEEEEELICIOUS breakfast one could ever hope for! Seriously, amazing! Perfect amount of cinnamon and waffle, and soooo easy!  My husband was so impressed, he almost didn’t believe how easy it was!

Just pop open a tube of cinnamon rolls, and plop them on a hot waffle iron. Before you know it, voila! They’re so good!

The Best Easy Hummus Recipe Ever!

This is a super quick and easy hummus recipe, that will save you a BUNCH over buying it at the store.

My family really enjoys healthy snacks that they don’t know are good for them, such as this yummy dip!  It’s great for breakfast or as an appetizer.  I hadn’t even considered making my own hummus until just recently when my cousin introduced me to her recipe.

It is SO easy.  Just a few ingredients, chop in a food processor or blender, and within minutes you’ve got a healthy, inexpensive snack for you and your family. And really, how many things are there to make with chickpeas or garbanzo beans anyway!  Plus, there are lots of choices for flavors to add also.

Compare prices and save! A 16 oz tub of hummus can cost $5 – $10 at the deli (my favorite is Trader Joe’s Hummus!) But why spend that much when you can MAKE this hummus for around $2 or less for 16 oz!!

Description

This easy and fast hummus recipe will be your favorite! Hummus is a Smart Carb! This hummus recipe is a perfect “Smart Carb” in the Nutrisystem daily meal plan.


Ingredients

Scale
  • 1/3 cup tahini
  • 2–4 tablespoons cold water, or more if needed to allow tahini to blend thoroughly
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon fine sea salt
  • 2 medium cloves garlic, peeled and smashed
  • juice of 1 lemon (aka 2–3 tablespoons)
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • optional toppings: extra drizzle of olive oil, chopped fresh parsley, sprinkle of ground sumac or paprika, toasted pine nuts

Instructions

  1. To food processor, add: tahini, cold water, olive oil, cumin, salt, garlic and lemon juice. Puree until smooth (3-4 minutes).
  2. Add chickpeas. Puree until smooth (3-4 minutes). Stop after 2 minutes and scrape sides of bowl to mis thoroughly. If too thick, add another tablespoon of water.
  3. Season with additional salt, cumin, and/or lemon juice if needed.
  4. Serve immediately, garnished with your desired toppings.  Or transfer to a sealed container and refrigerate for up to 3 days.
