Homemade Chocolate Ice Cream Pudding ~ Only 3 Ingredients! 

I love homemade ice cream, but I hate how much work it is to make it!!  I can honestly say this is the easiest ice cream ever. If you want vanilla, it’s just two ingredients! Chocolate adds one more. Quick, easy, and sooooo yummy!

The idea struck me to use dry instant pudding mix when ransacking my cupboard and not finding anything else that looked good. We had chocolate ice cream in the freezer, but that’s no fun. I wanted to make dessert with my little girl. Editor’s note: even though it literally took two minutes to mix up a batch, she still bailed on me. Ha, joke’s on her! I didn’t share. 😛

I used my KitchenAid Ice Cream Maker Attachment because I have one, and I love it. No rock salt or anything needed with it. It’s pretty easy to use.  I also like to do things with reckless abandon, so I didn’t look up how to actually use it. I did read the manual the first time, but that was at least a year ago and I can’t remember what I did this morning. So, yeah, you should check your own ice cream maker’s manual for best results.

As for the value, the pudding package has a tag on it that says 49¢ and the sweetened condensed milk was 69¢ (off brand, probably from a “crash and dent” grocery store).  If you add in the milk, I still spent well under $1.50 for the whole pint of ice cream.  This stuff is better than Talenti which costs about $6 per pint!

Homemade Chocolate Ice Cream Pudding ~ Only 3 Ingredients!

Description

Homemade ice cream is a favorite at my house! Whether you want the full ice-cream maker experience or you just want a quick treat (or don’t have a machine), you can score with this sweet treat your whole family will love.


Ingredients

Scale
  • 1 – 14-ounce can sweetened condensed milk
  • 2 cups heavy cream (1 pint)
  • 1 package chocolate pudding

Instructions

  1. Pre-freeze your ice cream maker’s bowl (overnight, or 24 hours if you have time). Check your’s instructions for best results. Assemble your ice cream maker.
  2. Add ingredients to a bowl and mix well, or if possible mix in a blender until smooth.
  3. Pour the ice cream mixture into the ice-cream maker’s frozen bowl and turn it on. Follow directions for your machine for how long to churn.
  4. I recommend serving immediately for the best soft-serve consistency. But, you can also freeze in a freezer-safe container for a few hours. Then, let it thaw a few minutes before scooping it out to serve.

No Churn Method:

  1. Follow steps above, but instead of churning in an ice cream machine, put in a freezer-safe container instead. Freeze for 5+ hours. Remove from freezer and allow to stand for 2-3 minutes. Then, scoop up and serve.

Birthday Cake Puppy Chow (aka muddy buddies mix) with Chex cereal – yum!

For those of you who do not know what Puppy Chow is, it is a yummy treat that is extremely EASY to make. It takes no time and you only need a few ingredients. While many people do many different things with their puppy chow, also referred to as muddy buddies, the main ingredients you’ll find in most of the puppy chow recipes are powdered sugar, Rice Chex cereal, and melted chocolate.

This birthday cake puppy chow recipe has a few extra ingredients to give it that birthday cake feel. It is perfect for parties, get togethers, or  just any occasion where you want to throw something together super quick.

Here’s how to make Birthday Cake Puppy Chow:

You will need the following ingredients (you can find the measurements listed below on the recipe): Rice Chex cereal, White Chocolate Chips, Powdered Sugar, Birthday Cake flavored Cake Mix (OR yellow or funfetti cake mix), and sprinkles.

First, you’ll combine the powdered sugar and cake mix in a large container that also has a lid (this will make things very easy later on).

Set the powdered sugar/cake mix mixture aside, and in a separate bowl, melt the white chocolate chips in the microwave. You can follow the instructions that came with your chocolate chips on melting it, or if it doesn’t have any, microwave the chocolate chips for 1 minute and then stir them. After that, you’ll keep microwaving the chocolate chips in 15 second intervals and stirring after each time until they’re all melted.

Once you have your melted chocolate, get 5 cups of the Rice Chex cereal and pour it into the melted chocolate (or you can pour the chocolate over the cereal. whichever is easier for you. Also, if you find the chocolate is too thick add a little shortening or melted butter). Mix gently until all of the cereal is coated in white chocolate.

Once your is cereal is all coated, fold in the sprinkles.

Add the coated cereal to the powdered sugar/cake mix mixture you made first. Put the lid on the container and shake, shake, shake!! Get all the cereal coated. NOTE: You could also do this in a ziplock bag — if you prefer that over a container.

Once you have all of the cereal coated, you’re done! Time to enjoy!

Ingredients

Scale
  • 1 1/2 Cups Cake Mix (It can be Birthday Cake mix, Yellow Cake mix, or even Funfetti Cake Mix)
  • 5 1/2 Cups Rice Chex Cereal
  • 1 1/2 Cups White Chocolate Chips
  • 1/2 Cup Powdered Sugar
  • 1/2 Cup Sprinkles

Instructions

  1. In a large container combine the powdered sugar and cake mix and then set aside.
  2. Melt the white chocolate chips in the microwave. Follow the instructions the chips came with, or if did not come with any, place the chocolate chips in a microwave safe bowl and heat for 1 minute. After you heat them for 1 minute, mix and then heat again in 15 second intervals,stirring after each time, until the chocolate chips are all melted
  3. Add the Chex cereal to the melted chocolate, or if you find it easier to just pour the melted chocolate over the cereal, do that. Stir gently, getting all of the cereal coated with the white chocolate. Once you have all the cereal coated, add the sprinkles.
  4. Add the cereal that you just coated with melted white chocolate and sprinkles to the large container with the powdered sugar/cake mix. Put the lid on the container and shake it to get the cereal coated with the powdered sugar/cake mix. (Note: You can also do this with a ziplock bag if you prefer. Just add the chex that has been coated with the chocolate to a ziplock with the sugar/cake mix and shake it).
  5. Once you’ve coated the Chex evenly, you’re done. Enjoy!
  6. You can store extra puppy chow in a container or ziplock bag.

Crock-Pot Chicken & Vermicelli Recipe {Easy, 3 Ingredients}

I put chicken in the slow cooker yesterday, and stared at it. lol! I’m so bored with food right now, I couldn’t think of anything to make! The weather is getting colder, so I’m craving comfort food. But, I’m busy and tired and don’t feel like cooking.

So, I wandered to the cupboard and stared at that stuff for a while. I saw the generic Rice-a-Roni and my mind wandered to recipes I’ve seen on Pinterest; I thought: Hey! That might work!!

Mustering up all my courage, I went for it!  First, I added water to the chicken in the Crockpot, then dumped in the flavor packet. I followed with the rice and vermicelli mixture and covered it. I set it to slow cook for 4 hours (my regular Crock-Pot doesn’t have a lot of settings, lol).

I stirred it twice, in that time. Twice. Not exactly hard work here, folks!

By late afternoon the house smelled AMAZING!  My family came out of the woodwork, asking when dinner would be ready. Then, at suppertime when it was ready, I uncovered it and stirred one more time. It was done, but how would it taste?

I was a little surprised at how incredible it tasted! There were just the right seasonings, and the rice mixture tasted — as my mom put it — “almost like stuffing”. I wondered if my family would think it was too done or too mushy. That’s a long time for rice to cook!  They did NOT think so; they loved it.

My husband had a good idea I think I’ll try next time: don’t add the rice and vermicelli right away. Wait, saute in a pan in oil until golden brown (as you would per the directions to make Rice-a-Roni). Then add it and let it soak up the goodness. That way it would be less cooked, a little crispier and a darker color. Don’t get me wrong, it was fantastic the way I did it. But, I think I’ll try the crispy way too. I like things crispy though! So, if you need super easy – just throw it all in and let it cook. If you want a little more crispy, you have that variation option as well.

Yummy! Combine Pumpkin Spice and Caramel in this delicious bread featuring Werther’s!


Ingredients

Scale
  • 25 pieces (5.5 oz.) Werther’s Original Chewy Caramels, unwrapped
  • 2 1/4 cups all-purpose flour — divided use
  • 3/4 cup butter or margarine – softened
  • 2 cups confectioners’ sugar
  • 1 tablespoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 can (21 oz) apple pie filling

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour a 9“ x 5“ inch loaf pan. Set aside.
  3. Cut caramels into four pieces using a kitchen scissors.
  4. Toss with 2 T. of the flour in a small bowl to prevent them from sticking together. Set aside.
  5. Snip the apple slices in the pie filling into thirds.
  6. Using an electric mixer beat the butter, sugar and vanilla until fluffy.
  7. Add the eggs, one at a time, beating well after each.
  8. In another bowl, stir together the remaining flour and spices.
  9. Add the flour mixture to the butter mixture and blend well.
  10. Using a wooden spoon, stir in the apples and caramel pieces. Pour into the prepared loaf pan.
  11. Bake for 1 hour and 30 minutes, or until a toothpick inserted into the centers comes out clean.
  12. Cool completely on a wire rack and then remove from pan.
  13. Yield: 1 (9“ x 5“) Loaf

Mix ingredients in punch bowl, add muddled fruits, chill and serve with ice.

 

Dab On ‘Em Wings

Ingredients:

.3 cup Crown Royal Canadian Whisky®
.3 cup Honey
.25 cup Soy sauce
2 Tablespoons Thai chili sauce
1 packet (0.75-ounce) stir-fry seasoning
2 teaspoons crushed garlic
4 pounds chicken wing drumettes
3 scallions (green onions), finely chopped (optional)
.25 cup chopped peanuts (optional)

Directions:
In a large bowl, combine whisky, honey, soy sauce, chili sauce, stir-fry seasoning, and garlic. Add drumettes, tossing to coat. Cover with plastic wrap and marinate in refrigerator for at least 3 hours, preferably overnight.

Set up grill for direct cooking over medium-high heat. Oil grate when ready to start cooking. Let drumettes stand at room temperature for 30 minutes. Place on hot, oiled grill. Cook for 12 to 18 minutes or until cooked through, turning occasionally. Transfer chicken to a platter. Sprinkle with chopped scallions and peanuts (optional).

 

Orange Crush Punch

Serves 6

Ingredients:
9 oz. CAPTAIN MORGAN® Coconut Rum
9 oz. Orange juice
6 oz. Cranberry juice
3 oz. Ruby red grapefruit juice

Directions:
Combine all ingredients including Captain Morgan Coconut Rum in a pitcher and stir.

 

Bucking BBQ Bites

Chicken Recipe

Ingredients:
Nonstick cooking spray
2 boneless, skinless chicken breasts, cut into 1-inch cubes
8 oz. (half pound) bacon, cut into thirds
1/2 cup Spicy Sweet BBQ Sauce (recipe below)
Toothpicks

Instructions: Preheat oven to 300 degrees. Line a large baking sheet with aluminum foil. Spray lightly with cooking spray. Wrap each chicken piece with a small strip of bacon. Secure with a toothpick and place on the baking sheet. Brush with BBQ sauce. Bake for 15 minutes. Remove pan from oven, brush bites with more BBQ sauce, and return to oven. Bake for 15 more minutes. Serve warm.

Sauce Recipe:

1 1/2 cups brown sugar
1/2 cup chile sauce
1/2 cup Captain Morgan® Original Spiced Rum
1/4 cup low-sodium soy sauce
1/4 cup ketchup
1/4 cup Worcestershire sauce
2 garlic cloves, crushed
1 teaspoon ground dry mustard
Ground black pepper, to taste

Instructions: Combine all ingredients in a medium saucepan over low heat. Bring to a boil. Reduce heat and simmer 30 minutes, or until thickened as desired. Stir occasionally. Use immediately as you wish, or store in refrigerator until ready to use.

Angry Orchard Hard Cider Copycat Recipe {3 Simple Ingredients}

My new favorite thing is hard cider! I don’t love Redd’s but I do love Angry Orchard. I just don’t love how much it costs! So, I set out to make my own. After an exhaustive search online, I came to the realization that nobody has done this! Or, at least, I couldn’t find a recipe to make hard cider. It’s exciting to be the first, but there were many failed attempts before I finally made a drink that everyone agrees tastes like hard cider and is super good!!

I like to improvise, so I’ve added many things you can substitute ingredients with. That way you can always enjoy a hard cider, no matter what you have on hand.

Just three easy ingredients!

  • Beer:  I used Michelob Golden Light because it has only 90 calories and is low carbs, since you’re only using about half a can per glass that’s just 45 calories per serving!
  • Apple juice or apple cider: There are so many varieties of juice! I tried from concentrate (pictured) and it was great. I also tried Cran-Apple juice and I very much preferred it to plain apple juice. Give it a whirl and let me know which you liked best
  • Lemon: Again, so many options! I tried (and liked) lemon juice from concentrate, lemonade, Diet Mt. Dew (this was great!), Margarita mix, Bud Light Lime-a-Rita… the sky is the limit. Just so you get a little lemon taste in there with it. Go easy on the lemon so it doesn’t overpower it

Beergartita Recipe – CopyCat Bud Light Lime-A-Rita (YUM!)

If you like Bud Light Lime-a-rita (my favorite!) but hate the price, try this awesome recipe you can make at home. They’re great for parties!!

Ever since Bud Light came out with their yummy Limearitas, I have been in search of an alternate that wouldn’t cost so much. At $10 – $15 per 12-pack, the bud light Limearitas are a little high price for my taste. And, they’re little cans, not the full 12 oz we’re used to in a beer.

If you’ve been a fan for a while, you may have the FREE Jose Cuervo Margarita ball we posted years ago. This is the perfect time to use it! 😉

  • 1 – 12 ounce can frozen limeade concentrate
  • 16 ounces light beer 2 cans
  • 3/4 cup tequila
  • Course salt
  • Lime wedges garnish

Instructions

  • Make the limeade (follow directions on package) in a pitcher.
  • Add the beer and tequila (to taste).
  • Wet each margarita glass rim with lime wedge, and dip in salt.

Southern Style Smashed Potato Salad Recipe

Last month we went to Arkansas and Texas to bring my mother-in-law to a bluegrass festival. While there we enjoyed all the southern cooking, sweet tea, and I actually got to try something new that I fell in love with:  Southern Style Smashed Potato Salad!!  Forgive me, I’m from Wisconsin originally and had never tried this. All I can say is YUM!

What is Mashed Potato Salad?

It’s basically the same as regular potato salad, but you mash – or smash – the potatoes before you mix them in. Cook them a little more firm than you’d cook mashed potatoes. So, they’re not mushy.

Also, Southerners seem to be torn on whether to use mayonnaise or Miracle Whip in this recipe. So, I compromised and used half of each.

When I cook, I like to try new things. While that’s awesome, it also means that I may never make something the same twice. It’s also hard to write down what I’ve done after the fact!

Smashed potatoes are the perfect side dish for your summer barbecues and picnics. If you like potato salad, you’ll love it!

Ingredients

Scale
  • 3 lbs yukon gold or russet potatoes, cut into chunks
  • salt & pepper
  • 2 Tablespoons distilled white vinegar
  • 1/2 cup mayonnaise
  • 1/2 cup Miracle Whip (or use total of 1 cup Mayo instead of half of each)
  • 1/4 cup water
  • 1/4 cup sweet pickle juice
  • 3 Tablespoons prepared yellow mustard
  • 1/4 teaspoon Cayenne pepper
  • 3 hard-cooked large eggs, chopped
  • 3 green onions, sliced thin
  • 1/2 cup chopped sweet pickles (I used baby gherkins)
  • 1/2 cup finely chopped celery (about 2 stalks)
  • 1/4 cup finely chopped onion
  • 1 – 14 ounce can black olives, sliced (optional)
  • smoked paprika (optional)

Instructions

  1. Prepare potatoes (see notes) by washing well and cutting into medium-size (about 1″) chunks.
  2. Put the cut potatoes in a large pot, cover with water and add 1 T salt. Bring to a boil over High heat. As soon as it starts to boil, reduce heat to Medium. Then, cook until the potatoes are fork tender.
  3. Pour potatoes into a colander to drain water. Place 3 cups of potatoes to a large bowl, and add 1 T vinegar to it. Then, coarsely smash them with a potato masher. (Coarsely, meaning you don’t want smooth mashed potatoes – you want them a bit chunky.)
  4. Spread out the remaining potatoes on a cookie sheet, and drizzle 1 T vinegar, tossing carefully to mix. Let them cool completely.
  5. In a separate bowl, whisk the mayo/Miracle Whip, water, pickle juice, yellow mustard, Cayenne seasoning, along with 1 teaspoon salt and 1 teaspoon pepper. Mix well, and then add this mixture to your smashed potatoes.
  6. Finally, fold in the eggs, celery, green onions, pickles, onion and the rest of the potatoes.
  7. Cover and refrigerate until fully chilled (about 2 hours).
  8. Season with additional salt & pepper if needed and sprinkle with smoked paprika if desired.

Notes

If using russet potatoes, remove peels. If using Yukon Gold or Red potatoes, then you can leave the peels on.

Don’t forget, the salad needs to be refrigerated for a few hours before serving!

Spinach Dill Deli Dip

This is one of my favorite things to snack on while waiting for Holiday dinner! Sadly, you can’t find it everywhere. Some parts of the country don’t know about it yet! 😉

When I lived in Southern California I had a really hard time finding it in the deli section of my grocery store.  Even if you can find it, it’s not cheap! It’s much cheaper to make. Give this awesome recipe a try!

Serve in a hollowed-out round bread loaf. Kings Hawaiian Sweet bread is the PERFECT accompaniment to this awesome cold spinach dip. Just whip up a batch or two, cut the middle of a round loaf and serve in it.  Then, cut the removed bread into bite-size pieces and set alongside bread bowl. Hungry friends and family can use the bread to scoop up the dip.

Warning: make more than you think you’ll need. This stuff disappears FAST!

Description

Try this Midwestern favorite appetizer that’s creamy and tangy at the same time. Scoop it up with your favorite Hawaiian sweet bread for an addicting treat you won’t want to stop!


Ingredients

Scale
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 package (10 ounces) frozen chopped spinach, thawed, drained and squeezed dry
  • 1 teaspoon McCormick® Dill Weed
  • 1/8 teaspoon McCormick® Onion Powder

Instructions

  1. Mix all ingredients in medium bowl until well blended. Cover.

  2. Refrigerate at least 1 hour to blend flavors. Serve as a dip with assorted cut-up vegetables or crackers.
