My zucchini plant is cranking out produce at an amazing rate, and I needed another recipe to make use of them! This Zucchini Margherita recipe is super easy and only has a few ingredients. You can make them as individual appetizer type, bite-size pieces or just make a whole pan full and load them onto your plate. Either way, they taste awesome!
